Met 2 guys at a job but don't know if they are just being polite or genuinely interes

Met 2 guys at a job in the industry I work in but don't know if they are just being polite or genuinely interested. Hi, Met 2 guys at a cafe at work at lunchtime (same place of work) and we had a convo for around 25-30 minutes and one of them offered their contact details (I didn't even ask for it) and so we swapped contact details. However, the next day, they weren't there during the same time (giving a time bracket of around 30 minutes earlier and later than our convo yesterday so say, I met them at 12.15, from the times of 11.45 to around 1.15-ish, they weren't there. During the conversation, they seemed genuinely interested in everything I was saying but surely if they were honestly wanting to be friends/liked me, they would have been at the same place around the same time the next day? (Esp. as everyone has fully flexible lunchtimes - can take breaks/lunchtimes whenever they like - within reasonable limits). So, were they just pretending (to be polite and appear friendly) despite not caring very much or have you ever really liked the company of someone but not gone to meet up despite having the opportunity to, the next day? or in a hypothetical situation, could you say that if you did like the person, you would see them the next day i.e if the chances of seeing them are high (e.g like they are in this situation). I'm just assuming that they obviously weren't very interested :(
