Has anyone here walked the "Camino de Santiago" in France/Spain?

If you have, I would LOVE to hear your thoughts.

My SO and I are taking my kids (age 21 and 19 when the trip begins) to Europe to hike this pilgrimage next year. It is 500 miles of relatively easy hiking which takes approximately 30-40 days to cover. We have more than a year to plan this trip as we are planning on leaving May, 2016.

I am not looking for judgments about how this trek has become commercialized, partially paved, not a "true" hike, too crowded, etc. I've read every possible commentary and I know what I'm in for.

My specific question is, if you DON'T have a full 30 days to commit to the hike (more like 17-20 days) where would you pick up the trail for the best sites, scenic route, culture, knowing that you missed some of the most beautiful parts of the "The Way"?? I know there are specific distance requirements in order to get your pilgrim "passport" stamped and to be able to stay in the alburgues.
