Question for me fellow geeks...Hyper-V

With the new Dell Poweredge 6950 in, I'm thinking of moving all my VM machines to the 6950 and using the Poweredge 2900 strictly as a file server/ftp sever. The 6950 has 4 dual core opteron 2.20 cpus and 32 gigs ram...200 bux to upgrade to 4 of the best quads.. The 2900 have 2 quad Xeon 2.20 cpus and 8 gigs ram..200 bux to upgrade the ram to 24.. Going to use windows server 2012. Tried VMWare...love it, but not for a media network... Right now 4 VMs running on the 2900 and things gets slow when I'm encoding... What do you guys think? I also need to take one of them with me to my new job one state away. I'll be setting up a VPN between them. I have a 16mb/2mb connection on one end and 2 60mb/10mb connections on the other...For traffic, what do ya think I should put in the bigger connection?? File server?? 24 TB of movies, videos and disc images..
