Don't know what to do about this girl?

I'm at university and decided to play pool this year as something to do in the week. The first session I attended, there was only one girl there, who I got chatting to and got on really well with. Afterwards a few of us went out to a club, where we continued to chat and got on like a house on fire. Unfortunately, she got really drunk, and seeing as she lived near me, I decided to make sure she got home safely in a taxi. As we left, out of the blue she deliberately mentioned she had a boyfriend, and then once we got out of the taxi, I walked her home and thought nothing of it.
A few weeks later, she text me at the weekend asking if I wanted to go for a drink. I should have been on a night out, but cancelled my plans and went for a drink anyway. Everything went really well, and then after a few drinks, we went back to mine. The morning after we both agreed to keep things casual as neither of us were looking for anything serious.
The same thing happened twice more, where we went for drinks then went back to mine or hers.
Eventually, when we were on the same night out, as we were walking home I plucked up the courage to ask if she wanted anything more serious, to which she responded that she wasn't after anything serious due to her having been in a serious relationship for the past few years. We argued for a while, but when I saw her the next week she didn't bring the argument up.
In response to this, I carried on going out with my mates, and ended up with one of my mates friends after a night out, but it just didn't quite feel the same.
I'm really struggling as to what to do, because I really like this girl but don't want to risk waiting until she is ready for a more serious relationship, and every time I go on a date or see someone else it's not the same. I've never been in a serious relationship before, as most of my time at university and college I've not been looking for a relationship, instead just going out having fun and messing around.
