Question about estate planning after divorce - kids and new wife

Sorry for the morbid topic, but would appreciate your thoughts. If you have minor children from a prior relationship, you will probably leave them some kind of trust, right? Question is - who should be named holder of that trust until the children are 18, your ex (children's mother), or your wife (as your life partner) and why do you think this?
